If you prep you should can or at least know how to. You probably can the usuals of veggies and jams. Peaches and green beans. Did you know some of your favorite things can be canned too? I can chili, spaghetti sauce, and even tortilla soup often. I make huge batches every time I cook these family favorites and jar the majority of it. It can take a little extra time but it is so worth it in the food storage and for nights when I don't want to fuss. You would be surprised at what you can put in a jar!
I knew from the title I shouldn't have read this since I haven't had lunch yet. Pardon while I go stick my head in the fridge and drool.
ReplyDeleteMMM. I've never canned it, but I do know chilli frozen and reheated tastes better than fresh. I would venture to guess canning it would do the same to enhance the flavors.
ReplyDeleteNot a bad idea. If you cook a serious pot, there's plenty of leftovers. Now, how do you can the cornbread in there with it and keep it from getting soggy?
ReplyDeleteI am absolutely going to have to learn this skill. I'll talk with my wife this evening about it. My mother in law gave me a pressure cooker years ago but I used it to be a dog water bowl. :-( I missed the boat on that.

ReplyDeleteThis particular canning batch was Foster a family campout. I took it up with us and easily fed 30 with some left over. My dad was one to freeze it as well but my thought it I would rather have it canned because then I don't have to worry about freezer failure. My chili is a family hit LOL as well as lasagna where I use my homemade canned sauce. It takes a little time to jar but it is worth it.

Being a Texas girl at heart I have a weakness for ranch style beans. I can my chili without and then I add the beans when I heat it to serve so they aren't mushy. The flavor is beautiful. Have to have beans in chili.
