Tis the Season to be Canning

So I already have about a million jars of dill pickles. Alright, not a million, but it might as well be. I'm going be finishing off the last of my case of cukes tonight. I was holding off to make dill relish, but never got around to getting peppers and things, so looks like they will have to be plain ol' dill pickles.

I also got a case of peaches, and wanted to do those tonight, but I'm thinking I'm going to make cupcakes instead. I know that's a bit counter-productive, but dammit, I want cupcakes.

  1. I have spent the last month canning or freezing something. First it was peas, then green beans, cucumbers, cherries, peaches, freezer coleslaw. Now I am finishing up the sweet corn and starting on tomatoes. My parents and I borrowed a huge and have a batch of sauerkraut started. It has been LOTS of work but..... It will all taste great this winter and my grocery bill will say "thanks". I have been thinking about my pioneer ancestors lately. They had to do this or their families would not eat. Puts it all in perspective.

  2. Haha I didn't end up making cupcakes after all (although I did start some filling for some, long story) but I did make a peach cobbler so I still had my happy sugar moment.

    I've actually been a bit on and off about canning this summer. I've never done this before, not even with my mom or anything, so it's been a lot of exhaustive trial and error. I'm picking up two cases of tomatoes today, and I want to try for Spaghetti sauce, and maybe some salsa. I still have that damn case of peaches, and the plan for them is to do sliced, jam and peach butter. Part of the thing is that with it just being the Boy and I we really just don't eat that much. I now have 17 quarts of pickles (after giving some away!) and the Boy and I won't use those in 5 years, let alone 1 year.

  3. Hah! I caught heck with the Missus for making pickles and pickles and more pickles- dill and sweet butter chips. But the cucumbers just kept coming and coming and , well, what does one do?

    How many pickles is enough?

    (Btw, if you let the pickles grow good and fat, with lots of seeds, your chickens will love you for sharing with them)
