Open mouth, insert Fritter

I had an insane sweet tooth craving last night. I really wanted donuts, but I don't have a deep fryer and all the recipes I found for baked donuts just sounded... Blah. Thought about beignets, but again no deep fryer. I finally found a recipe for fritters and went a-ha!

I diced up a cameo apple I had in the fridge, whipped together the fritters (I added both cinnamon and a dash of nutmeg). I didn't have any powdered sugar, but I made a light glaze with apple cider and sugar. I had a one (or two) while they were still hot and saved the rest for breakfast this morning. They were amazing both ways!

  1. 1 cup flour
    1 1/2 tsp baking powder
    3 tbsp sugar
    1/4 tsp salt
    1 tbsp ground cinnamon
    1/8 tsp ground nutmeg
    1 egg (beaten)
    1/3 cup milk
    1 cup apple (diced)
    1 cup cooking oil

    Mix together beaten egg and milk mixture, and slowly add in the dry ingredients. When combined, fold in diced apples.

    Put into pan with heated oil (I use medium heat) the original recipe calls for teaspoon size fritters, I do more like 1/4-1/3 of a cup myself.

    Fry for 1-2 minutes per side until medium brown. Glaze or dust with powdered sugar and serve!

  2. Depending on how big you make your donuts - 1/2 to 3/4 inch of oil in a fry pan should do well enough. It isn't like you need to dip a half a chicken all the way under. Donuts float - if you get it halfway under the oil I would check the recipe over . . .

    A small pan would take less oil, but the larger pan would be more temperature-stable, and let you fry more at a time.

    Mom cheated, sometimes, and took a tube of pre-made biscuits, broke it open, took each of the 8-12 biscuit rounds, stretched/poked a hole in the center, and fried them - then roll in sugar. Kinda close to donuts, and quite quick. This wouldn't do much for a real prepper, but even so there are days . . . Enjoy!
